Brown Butter Radishes with Feta & Toasty Panko

Ingredients

  • 6 tablespoons unsalted butter

  • 2 bunches radishes, divided (about 20 radishes)

  • 1 small shallot

  • 2 tablespoons apple cider vinegar

  • 1 lemon, zested and juiced

  • 1 teaspoons honey

  • 2 tablespoons extra-virgin olive oil

  • 1/2 cups panko breadcrumbs

  • 1/2 cups feta, crumbled in big rustic chunks

  • ½ cups fresh mint leaves, divided

  • 1 teaspoons flaky sea salt, plus fine salt for seasoning

  • 1/2 teaspoons freshly cracked black pepper

Shave and shock: Set aside your 8 biggest radishes from 2 bunches radishes, divided (about 20 radishes) — those get the butter treatment later. Shave the rest, plus 1 small shallot, on a mandoline into thin little petals. Toss them with a pinch of fine salt, wait two minutes, then dump everything into ice water. The salt-plus-cold combo makes them curl up and get impossibly crisp. This is the crunch that makes the dish.

Brown the butter: In a wide stainless pan over medium heat, melt 6 tablespoons unsalted butter. Swirl it around as it foams, and the second the milk solids turn hazelnut-brown and it smells nutty and amazing, pull it off the heat. Do not check your phone. Brown butter goes from perfect to burnt in about fifteen seconds, we've all been there.

Warm the radish halves: Halve the reserved radishes and lay them cut-side down in the warm brown butter over the lowest heat. We are not cooking these. We're just warming them through — a minute or two per side, until they're glossy and buttery but still totally crunchy. Move them to a bowl and leave every bit of that butter in the pan. We need it.

Dress the warm radishes: While the halves are still warm, hit them with half of 2 tablespoons apple cider vinegar and half the juice from 1 lemon, zested and juiced, plus a little fine salt. Warm vegetables actually absorb dressing instead of just sitting in it — this is the move that makes them taste seasoned all the way through.

Toast the panko: Put the pan (with all that leftover brown butter) back over medium heat and add 0.5 cups panko breadcrumbs. Stir constantly until the crumbs are deeply golden — darker than feels right, honestly, because they need to hold their own against the feta. Off the heat, toss with half the zest from 1 lemon, zested and juiced and a pinch of salt, then spread on a plate so they stay crisp. Try not to eat them all. Good luck.

Whisk the dressing: In a big bowl, whisk together the remaining 2 tablespoons apple cider vinegar, the rest of the lemon juice and zest, and 1 teaspoons honey. Slowly stream in 2 tablespoons extra-virgin olive oil while whisking until it comes together. Season with fine salt and 0.5 teaspoons freshly cracked black pepper. This little bit of honey and oil is what turns "vinegar on radishes" into an actual dressing.

Toss the shaved salad: Drain the shaved radishes and shallot and dry them really well — wet radishes will water down your dressing and we did not come this far for that. Toss them in the bowl of dressing with most of 0.5 cups fresh mint leaves, divided, torn right before they go in.

Build the platter: Grab your prettiest platter. Warm buttered halves go down first as the base, then tumble the shaved salad over and around them. Big chunks of 0.5 cups feta, crumbled in big rustic chunks on top, a generous shower of the toasted panko, the rest of 0.5 cups fresh mint leaves, divided, 1 teaspoons flaky sea salt, plus fine salt for seasoning, and a final crack of 0.5 teaspoons freshly cracked black pepper. Serve immediately — this dish peaks in the first five minutes, while the warm-cold contrast is doing its thing.

Notes

The whole point of this dish is the temperature contrast — warm buttery halves, ice-cold crunchy petals — so don't let it sit around before serving. If your feta is on the saltier side, taste before you add more salt at the end. And if there's brown butter left in the pan? Drizzle it over the top. I'm not going to pretend I don't. Pairs extremely well with something cold and fizzy.
