Chia Pudding Parfait

Makes 5 cups • Serves 5

Ingredients

Base Chia Pudding

  • 1 cup unsweetened oat milk

  • 1 cup light canned coconut milk

  • ½ cup white or black chia seeds

  • 2 teaspoons maple syrup

  • 1 teaspoon vanilla extract

Fruit & Crunch Toppings

  • 1½ cups seasonal berries or fruit (such as strawberries, blueberries, or sliced peaches)

  • ⅓ cup roasted almonds, lightly chopped

  • Optional: ½ teaspoon wildflower honey, for drizzling

Instructions

  1. Prepare the Chia Base:
    In a large mixing bowl or jar, whisk together the oat milk, coconut milk, chia seeds, sweetener, and vanilla extract until well combined.

  2. Let the Mixture Bloom:
    Allow the mixture to sit for 10–15 minutes, then stir again to break up any clumps. Cover the bowl or jar.

  3. Chill:
    Refrigerate for at least 4 hours or, ideally, overnight until thickened.

  4. Assemble the Parfaits:
    Divide the chia pudding evenly among 5 jars or cups. Top each portion with fresh seasonal fruit and a sprinkle of roasted almonds. Add a light drizzle of wildflower honey, if desired.
