Grilled Za’atar Chicken Thighs

Serves 4–5

Ingredients

  • 2 lbs organic boneless, skin-on chicken thighs

  • 2 tbsp za’atar

  • 3 tbsp avocado oil

  • 1 tsp kosher salt

  • ½ tsp black pepper

  • 3 cloves garlic, grated or minced

  • Zest of 1 lemon

  • Parsley garnish

Instructions

  1. In a large bowl, combine za’atar, avocado oil, garlic, lemon zest, salt, and black pepper. Add chicken and coat evenly. Cover and marinate at least 1 hour or up to overnight.

  2. Grill method: Heat grill or grill pan over medium-high heat. Grill chicken for 6–7 minutes per side, until cooked through and nicely charred.

  3. Oven method: Preheat oven to 425°F. Place chicken on a wire rack over a baking sheet. Roast for 25–30 minutes, then broil briefly to char.

  4. Rest chicken 5 minutes before slicing
