Grilled Za’atar Chicken Thighs
Serves 4–5
Ingredients
2 lbs organic boneless, skin-on chicken thighs
2 tbsp za’atar
3 tbsp avocado oil
1 tsp kosher salt
½ tsp black pepper
3 cloves garlic, grated or minced
Zest of 1 lemon
Parsley garnish
Instructions
In a large bowl, combine za’atar, avocado oil, garlic, lemon zest, salt, and black pepper. Add chicken and coat evenly. Cover and marinate at least 1 hour or up to overnight.
Grill method: Heat grill or grill pan over medium-high heat. Grill chicken for 6–7 minutes per side, until cooked through and nicely charred.
Oven method: Preheat oven to 425°F. Place chicken on a wire rack over a baking sheet. Roast for 25–30 minutes, then broil briefly to char.
Rest chicken 5 minutes before slicing
